




Here’s a truly tasty meatloaf that’s really easy to put together and sure to become a family favorite.
Shredded sweet potatoes help keep it moist and tender, plus add a boost of vitamins and minerals. Barbecue sauce, both in the loaf and spread on top, adds a slightly sweet, slightly spicy flavor that brings it all together.

| 2 Cups shredded orange- or yellow/white-fleshed sweet potatoes, or a combination |
| 1 Cup diced onion |
| 3 large eggs, lightly beaten |
| 1 Tablespoon yellow mustard |
| 1 ½ Teaspoon salt |

| ½ Cup barbecue sauce, divided, plus more for serving |
