 What is a Sweet Potato? The sweet potato is in the Morning Glory family. It is an enlarged storage root that comes in many different shapes, sizes and colors. California grows both "dry flesh" and "moist flesh," sometimes referred to as a yam, and the "dry flesh" as a sweet potato. However, they are both sweet potatoes and of the vegetable family.
Columbus is credited with introducing Europe to the sweet potato after his discovery of the West Indies around the year 1500. It wasn't until many years later that the Irish or "white" potato was discovered in Peru. Sweet potatoes are not a potato that is sweet - they are as different from white potatoes as is a carrot. |

Sweet potatoes are native to Central America and Peru. A true yam is native to Africa. The term "yam" came to be synonymous with sweet potatoes because Louisiana used the word "yam" to market their moist, orange sweet potatoes. All yams grown in the U.S. are sweet potatoes. In general usage, however, the terms are used interchangeably.|
